Chicken Rogan Josh
(with Mt Barker Chicken Thigh Fillets)

This Indian classic is usually served with lamb but just as tasty and succulent with chicken.
Ingredients:
• 800g Mt Barker Free Range Chicken Thigh Fillets halved
• 1 tbs vegetable oil
• 2 onions chopped
• 1 green chilli chopped
• 1 x 3 cm piece fresh ginger finely chopped
• A bunch of fresh coriander, finely chopped (including stalks)
• 2 bay leaves
• 1 x 400g tin tomato puree
• 150g Rogan Josh curry paste
• 2/3 cup red lentils
• 800g Mt Barker Free Range Chicken Thigh Fillets halved
• 1 tbs vegetable oil
• 2 onions chopped
• 1 green chilli chopped
• 1 x 3 cm piece fresh ginger finely chopped
• A bunch of fresh coriander, finely chopped (including stalks)
• 2 bay leaves
• 1 x 400g tin tomato puree
• 150g Rogan Josh curry paste
• 2/3 cup red lentils
Instructions:
1. Heat a saucepan over medium heat and add the oil.
2. Cook the onion, chilli, ginger, coriander and bay leaves stirring until the onions are golden. Stir in the tomato puree and curry paste and cook for a further minute before adding the chicken, lentils and 4 cups (1 litre) of hot water. Season generously with salt and pepper.
3. Return the pan to a gentle simmer and cook for 45 minutes or until the chicken and lentils are tender, adding a little more water if it gets too thick. Serve curry with steamed rice, natural yoghurt and extra chopped chilli.
