Mt Barker Chicken

Serves: 4

Mexicali Chicken
• 500g Mount Barker Chicken Diced Leg Fillet, Diced Thigh or Breast Fillet
• 1 tablespoon oil
• 1 onion, finely chopped
• 1 teaspoon minced garlic
• 1-2 teaspoons Mexican spice blend
• Juice and zest of one lime
• Juice of one orange
• zest of ½ orange
• salt and pepper, to taste
• ½ cup coarsely chopped coriander
• wedges of lime and orange, to serve
Optional condiments:
• sour cream, avocado, chopped tomato, sliced black olives
1. Heat frying pan on medium, add oil.
2. Add onion and garlic and sauté for three minutes, until softened.
3. Add chicken and spread out evenly.
4. Brown on both sides.
5. Sprinkle over Mexican spice and stir-fry until spices are fragrant.
6. Season with salt and pepper to taste.
7. Add zest and juices and simmer until chicken is cooked through and sauce reduced.
8. Stir through coriander and serve with orange and lime wedges and your favourite Mexican condiments and salad ingredients.
9. For a complete Mexican themed meal, add soft tacos, rice or tortilla chips.
