Mexican Chicken Dippers
Whether for a party dish, or an informal family meal, this Mexican dip is a proven favourite. Toppings of corn kernels, diced tomatoes and jalapenos make a colourful addition.
Ingredients:
• 1 tablespoon oil
• 1 onion, diced
• 2 cloves garlic, minced
• 500g Mt Barker Chicken Mince
• 2 teaspoons Mexican Spice Blend
• 2 teaspoons paprika
• 1 tablespoon oil

• 1 can refried beans
• ½ cup sour cream
• 1 cup grated cheese
• ¼ cup sour cream
• 1 tablespoon milk
• Sliced spring onions, garnish
• Sliced black olives, garnish
• Mexican tortilla chips, to serve
Instructions:
1. Preheat oven to 350 degrees.
2. Heat a frying pan on medium heat.
3. Add the oil and when warm add onions and garlic.
4. Sauté for three minutes.
5. Add chicken mince and stir to break up evenly.
6. Continue cooking for five minutes, stirring occasionally, until lightly browned and juices have evaporated.
7. Add the spices and cook for five more minutes, reducing heat if necessary to prevent burning.
8. Remove chicken from heat.
9. Combine refried beans and sour cream until evenly mixed, and place in a shallow casserole dish.
10. Spread out evenly.
11. Top with half the chicken mince, then the cheese, and finally the remaining chicken mince.
12. Place in the oven 20 minutes, until cheese is melted.
13. Combine the sour cream with the milk.
14. Drizzle over the dish and garnish with sliced spring onions and olives.
