Get ready for the latest food craze – Savoury Sandwich Cakes. These cakes take sandwich presentation to a whole new level and they taste sensational. Basically the ‘cake’ layers are made of various breads with veggies, meats, eggs etc used for a stack of fillings, which are all then spread with a tangy cream cheese icing and decorated to impress. They are super easy to make and can be constructed a day ahead of time. Here’s just one example we created in our Mt Barker Kitchen to get you started. Use your masterpiece as an edible centerpiece decorated with a theme; ours was for an Easter brunch so we used little chicks!

Ingredients

  • 1 unsliced loaf of bread, a rectangular shape is easier to slice
  • Avocado Cheese and Carrot Filling:

    • 2 avocadoes, smashed
    • ½ c shredded Cheddar cheese
    • 1 lemon, juiced
    • Salt and pepper
    • 2 carrots, grated
    • Combine all ingredients in a bowl and set aside.

    Chicken, Chiver and Bacon filling:

    • 250 g Mt Barker Fully Cooked Diced Chicken
    • 2 rashers bacon, cooked and chopped
    • 1 Tbs chopped chives
    • 2 Tbs Aioli or mayonnaise
    • Salt and pepper
    • Combine all ingredients in a bowl and set aside

    Egg and Veggie Filling:

    • 4 eggs, boiled, shelled and chopped
    • ¼ c celery, finely chopped
    • ½ red capsicum, finely diced
    • 2 Tbs aioli or mayonnaise
    • Salt and pepper
    • Combine all ingredients in a bowl and set aside

    Cream Cheese Icing:

    • 750 g Spreadable cream cheese
    • 1/4c Tbs aioli or mayonnaise
    • Salt and pepper
    • Beat all ingredients until light and fluffy (food processor or hand mixer) and set aside

    Directions

    1. Cut all crusts off the bread and slice lengthwise into 4 layers. Ensure you have a flat surface (eg cutting board) and all fillings for the layers are already prepared.
    2. Assemble the first layer by spreading the bread lightly with the cream cheese and then topping that with about a centimeter high of the Avocado filling.
    3. Place the second slice of bread on top of the avocado layer. Spread the top lightly with cream cheese then top that with the chicken filling.
    4. Place the third slice of bread on top of the chicken layer. Spread lightly with cream cheese and top with the final egg filling layer.
    5. Place the fourth slice of bread on top of the egg filling, to complete your sandwich stack. Ensure all layers are standing straight and fillings reach the edges.
    6. Begin to ice your sandwich cake with the remaining cream cheese. It is easiest to ice the sides first, then the top. Don’t worry if it isn’t all perfectly smooth – your decorations can cover any icing imperfections.

      Loosely cover and refrigerate if making a day ahead.
    7. Carefully transfer your cake to the serving plate and begin decorating. We kept it simple and just pressed snow pea sprouts onto the sides. Top with colourful veggies and any themed decorations, i.e. Easter chicks, birthday numbers, baby carriages, wedding bells etc
    8. Use a bread knife to slice your cake, or an electric knife if you have one.
