Sunday Roast'
Sunday Roast never tasted so good………………

1. Roast Chicken with an extra special stuffing.
2. Preheat the oven to 180°c.
3. Combine the ingredients for the stuffing of your choice in a bowl.
4. Mix thoroughly. Wash the chicken with water, pat dry.
5. Push the stuffing into the cavity.
6. Truss the chicken by tying its legs together with butcher’s twine.
7. This helps to cook evenly. Place the chicken, breast side up, on a baking tray, season it well with salt and pepper and a drizzle of olive oil.
8. Roast for 25 minutes per 500g plus an additional 25 minutes for the stuffing, or until the juices run clear when the bird is pricked with a fork.
9. Remove from the oven and allow to rest, covered with foil for a few minutes.
10. Remove the stuffing from the cavity and serve it with the chicken, roast vegetables and gravy.

Fragrant blueberry & almond stuffing:
3 tbsp frozen blueberries
3 tbsp slivered almonds
1 tsp fresh rosemary
½ tsp cinnamon
5 slices bread, finely chopped
1 egg, beaten
Salt and pepper

Cranberry & Cashew Gluten Free Stuffing:

½ cup cranberries
½ cup cashews, chopped
1 tsp fresh thyme
5 slices gluten free bread, finely chopped
1 egg, beaten
Salt and pepper

Pumpkin, Spinach & Feta Stuffing:

1 cup pumpkin, peeled and finely cubed
½ leek, finely sliced
100g feta, finely cubed
½ cup pistachio nuts
Handful of spinach, shredded
4 slices of bread, finely chopped
1 egg, beaten
Salt and pepper

Bacon & Mushroom Stuffing:

4 rashes of bacon, shredded and lightly pan fried
1 cup button mushrooms, chipped
½ onion, finely sliced
5 slices bread, finely chopped
1 egg, beaten
Salt and pepper
