1 Bunch of leafy greens (spinach, bok choy, or choy sum)
1 Chopped peanuts
1 Chopped Spring onion
1 Bean sprouts
1 Fried shallots
SAUCE
3 tbsp Tahini
4 tbsp Soy sauce
3 tsp Sugar
½ tsp Five spice powder
1 tsp Szechuan peppercorn powder
½ cup Chilli oil
3 Cloves of garlic
½ cup hot cooking water from the noodles
Method
Add oil to a hot wok and sit until it begins to smoke.
Add chicken mince to the wok and add Chinese five spice powder, Szechuan powder, green onions, cooking wine, hoisin sauce, dark soy sauce and mix well.
To make the sauce combine all ingredients and mix well.
Add your noodles to the wok and add your leafy greens.
To plate up add your noodles to a bowl and garnish with fresh beans sprouts, spring onions, fried shallots and peanuts.
